Quaker Vanishing Oatmeal Cookies

Hello and welcome. Whenever I need this recipe I can never find it and that's partly why I am staring this blog. I am also hoping that my friends and family will join in to share their tried and true recipes and give us a forum to communicate a little more. Stay tuned because you will find lots of recipes from Sheila who inspires me on a monthly basis as I watch her cook delicious meals in her kitchen for a group of us.


Quaker Vanishing Oatmeal Cookies

2 sticks margarine or butter, softened -
1 cup firmly packed brown sugar
1/2 cup granulated sugar
2 eggs
1 teaspoon vanilla
1-1/2 cups all-purpose flour
1 teaspoon baking soda
1 teaspoon ground cinnamon
1/2 teaspoon salt (optional) 
3 cups Quaker® Oats
1 cup raisins (I substitute with chocolate chips)

Heat oven to 350°F.
In large bowl, beat margarine and sugars until creamy. Add eggs and vanilla; beat well. Add combined flour, baking soda, cinnamon and salt; mix well. Add oats and raisins; mix well.
Drop dough by rounded tablespoonfuls onto un-greased cookie sheets.
Bake 10 to 12 minutes or until light golden brown. Cool 1 minute on cookie sheets; remove to wire rack. Cool completely. Store tightly covered.

  4. As a very organized person - which may explain why I don't have your artistic ability - and prolific cook, I had to laugh at your post. I used to have friends call me repeatedly for the recipes they got from me and lost. Obviously, you're not alone. Congratulations on the new blog. While I no longer really cook these days, I wish you well in this new adventure. It sounds delicious!
