This was a quick lunch when my cupboards were empty. Fortunately I had these pre-made pizza crusts, sauce and some cheese. Scrounged up some tomatoes and always have jalapenos.
so here is a quick photo as I was preparing these mini pizzas.
Sauce, tomatoes, jalepenos and some italian seasoning. I rub the pizza's with olive oil and bake them for 10 minutes BEFORE I add the toppings. I love a crunchy crust!
Add some of your favorite shredded cheese. Bake for about 15 minutes at 375.

Quaker Vanishing Oatmeal Cookies
Hello and welcome. Whenever I need this recipe I can never find it and that's partly why I am staring this blog. I am also hoping that my friends and family will join in to share their tried and true recipes and give us a forum to communicate a little more. Stay tuned because you will find lots of recipes from Sheila who inspires me on a monthly basis as I watch her cook delicious meals in her kitchen for a group of us.
Quaker Vanishing Oatmeal Cookies
2 sticks margarine or butter, softened -1 cup firmly packed brown sugar
1/2 cup granulated sugar
2 eggs
1 teaspoon vanilla
1-1/2 cups all-purpose flour
1 teaspoon baking soda
1 teaspoon ground cinnamon
1 teaspoon ground cinnamon
1/2 teaspoon salt (optional)
3 cups Quaker® Oats
1 cup raisins (I substitute with chocolate chips)
Heat oven to 350°F.
In large bowl, beat margarine and sugars until creamy. Add eggs and vanilla; beat well. Add combined flour, baking soda, cinnamon and salt; mix well. Add oats and raisins; mix well.
Drop dough by rounded tablespoonfuls onto un-greased cookie sheets.
Bake 10 to 12 minutes or until light golden brown. Cool 1 minute on cookie sheets; remove to wire rack. Cool completely. Store tightly covered.
